So you and your partner want to try something new in the kitchen? Or maybe we should say outside the kitchen. Grilling over charcoal is a perfect chance to learn a skill side by side, laugh at your mistakes, and end up with a delicious meal that you both made happen. No fancy gear needed. Just a grill, some charcoal, chicken, and a willingness to get a little smoky together.

First thing first: pick your chicken. Bone-in thighs or drumsticks are the easiest for beginners because they stay juicy even if you mess up the timing a little. Boneless breasts can dry out fast, so save those for after you get the hang of things. Have your partner pick the meat at the store together. That small choice already gets you both involved. You can talk about what flavors you like. Maybe you want a simple salt and pepper rub, or maybe you want to try a pre-made seasoning blend. Keep it simple the first time. You can get fancy later.

Now set up your grill. If you have never lit charcoal before, don’t worry. It is just a little fire building. One of you can stack the charcoal in a pile like a small volcano. The other can light the chimney starter if you have one, or use lighter fluid if you do not. Be careful with the fluid. Only a little squirt, then light it from a safe distance. Let the coals burn until they are covered in gray ash, about fifteen to twenty minutes. While that happens, you can sit together and watch the flames. That waiting time is not wasted. It is a chance to talk, maybe hold hands, and enjoy being outside without phones or screens.

When the coals are ready, spread them out into one even layer. Put the grate on top and let it heat up for a few minutes. Have one person hold the grill brush and scrape any leftover gunk off. The other person can bring out the chicken on a plate and the oil or spray. Brush a little oil on the grate so the chicken does not stick. Now you are ready to cook.

Place the chicken pieces on the grate skin side down if they have skin. Listen to that sizzle. It is a happy sound. Close the lid. Set a timer for about ten minutes. Open the lid carefully because hot steam can puff in your face. Use tongs to flip each piece. You can take turns flipping. One of you does the first round, the other does the second. It feels good to hand off the tongs and trust your partner. Put the lid back down and set another timer for ten minutes.

Check the temperature inside the thickest piece. You want it to reach 165 degrees Fahrenheit. If you do not have a thermometer, get one. They are cheap and keep you from guessing. If the chicken is not done yet, move it to a cooler part of the grill or lower the heat by closing the vents halfway. Talk about what to adjust. Maybe the coals are too hot. Maybe they are dying. You will figure it out together.

When the chicken is done, pull it off and let it rest on a clean plate for five minutes. Do not skip this step. That resting time lets the juices soak back into the meat. While you wait, you can high five or hug. You just grilled chicken together for the first time. That is a real win. Serve it up with some simple sides like a salad or bread that you bought already made. No need to cook everything from scratch on day one.

Look back at what you learned. You both had to communicate about when to flip, when to check the heat, and when to pull the chicken off. Maybe one of you was nervous about the fire. Maybe the other one was impatient to eat. But you worked through it. That is the whole point. Learning a new skill together is not about being perfect. It is about being in the same messy, smoky, tasty moment. Next time you can try a rub with paprika and garlic. Maybe you will cook vegetables in a foil pack at the same time. The grill becomes your shared hobby. And that hobby just might bring you closer.
